You won't find a list of superfoods without kale in the lineup, but how do you chop those big leaves so they are easy to incorporate into your salad, soup or stir-fry? Nancy Waldeck, a chef at Thomas F. Chapman Family Cancer Wellness at Piedmont, shares her tricks of the trade.
Whether you're working with flat kale (also known as "dinosaur kale") or more popular curly kale, you can use these cutting methods with your favorite kitchen knife.
- Start with freshly washed and dried kale leaves.
- Place one large leaf flat on a cutting board, folding it in half so the stem is exposed on one side.
- Run your knife between the leaf and the stem to remove the rib completely. Discard the stem.
- Take the remaining kale and roll it up.
- Walk your knife through the rolled up leaf to slice small slivers.
- Now use the leafy green superfood however you'd like.
