Parsley is more than just a leafy green decoration on your plate-- it’s a healthy herb packed with vitamin C, calcium and iron. Parsley also contains oils that neutralize carcinogens and fight cancer cells.
Though its stems and leaves are typically used to garnish salads, parsley has an excellent flavor and can be used in a variety of dishes. Nancy Waldeck, a chef at Cancer Wellness at Piedmont, shares a delicious recipe for parsley-based chimichurri sauce.
Parsley-based chimichurri sauce
Combine the following ingredients in a food processor:
- Parsley
- Cilantro
- Garlic
- Red wine vinegar
- Red onions
- Jalapenos
- Lime juice
- Red pepper flakes
- Olive oil
- Salt and pepper.
Blend the ingredients, and you’ve got a beautiful dip for boiled shrimp.
